Excel University published a three-part Copilot workflow for categorising transactions from a reference table, building formula summaries and PivotTables, and documenting the monthly refresh process. The walkthrough shows Copilot inserting static category values as well as generating reusable spreadsheet outputs. It also demonstrates that every AI-assigned category needs a human check before acceptance.

Expense categorisation is usually a repetitive judgement task: people copy prior labels, build lookups and then rebuild the same summary each month. A one-off Copilot result can save time while still leaving a fragile workbook that nobody knows how to refresh. This walkthrough joins the task into one reviewable monthly process: reference list, categorisation, live calculations, PivotTable and handover notes. The useful lesson is not to trust the first AI answer, but to turn it into formulas and documented steps that survive the next reporting cycle.
